The “crown” in a gravel driveway is the center high point that runs along its length. There should be a gentle slope going down from each side of the crown to help water run off instead of standing on and soaking through the gravel and washing out your road.

It is your driveway and I am a fan of freedom so you certainly can. If your wanting to get rid of the potholes you are going to need to make sure the roadway drains and it is possible that reshaping your driveway will eliminate the need for new materials.
If you have a truck, driving on the road while it is being worked won't be a problem, now the family van should be very careful. If you need to get your high performance, low clearance sports car threw then we should give it till the day is over. In most cases the road will only be improving while the equipment is working and unless your adding a culvert there shouldn't be a time it isn't passable.
That is going to depend on what shape your road is in. If you warn anyone that drives a car that they should be careful when driving up to the house, then getting some fill material onsite might be instore. Usually the fill material isn't the same stuff you put ontop.
If your road isn't very bad and has minor potholes it would be best for the budget if we crown and have a skilled dump truck operator add 57 rock ontop once the grader is finished.
Crushed stone #57 refers to stone that is about ¾”.

Crushed stone #67 includes stone that is ¾” or smaller in size. This is a great material for road and slab base as well as fill.
